Bacon and Green Veg Pasta (GF DF LowFODMAP LowGI)

This is a lovely fresh pasta dish that takes just a few minutes to cook with hardly any prep. Yum!


Smoked bacon lardons
1 garlic clove
1 green pepper
1 courgette
Greek basil (or normal basil if you can't get Greek)
A couple of handfuls of spinach
Olive oil
GF Pasta


Heat the oil and cook the bacon lardons and garlic for a couple of minutes.  Add the green pepper, courgette and basil to the pan and cook until soft.  Add the handfuls of spinach and cook until it wilts down.  Toss in the pan and serve with GF Pasta.  Top with shavings of Parmesan if you choose.

  2. Hi Kylie,

    They are little cubes of bacon (cooking bacon) found hiding in the bacon aisle of Sainsbury and Tesco (and probably others, but that's where I tend to shop). Normal bacon would do too, just these are chunkier and cheaper!
