This soup is quite quick and very easy. I tend to make up a batch whilst I'm cooking something else. It just simmers away on the hob. *Parsnips have a high GI, the soup means your BS may rise more rapidly - eat with high fibre meal.
Salt and Pepper
Soya Cream or Lactose Free Cream
Put the parsnips and cumin in a pan with a little olive oil and salt and pepper to taste.
Soften for 5 minutes.
Add the stock, bring to the boil, and simmer for around 40 minutes.
Blend to a smooth consistency.
Add around 50ml of soya cream and blend again.
