Ginger Cake (GF LF Low FODMAP

Ginger Cake GF LF Low FODMAP

Tried, tested and stuffed in record time Ginger Cake recipe. Yum.
If you wanted to make this with a lower GI, add some chopped hazelnuts and eat in small portions with (lactose free) cream.

110g hard margarine
100g dark muscovado sugar
150g golden syrup
100ml whole lactose free milk
2 medium eggs, beaten 
200g Rice flour
1 teaspoon bicarbonate of soda
4-6 teaspoons ground ginger

Pre-heat oven to 150 c (130 fan oven), gas mark 2.
Grease two 1 lb loaf tins.
Put the butter, sugar and syrup in a pan and heat gently until melted, stirring all the time.
Add the milk and when cool, beat in the eggs.
Sift the Juvela White Mix, ginger and bicarb into a large bowl and make a well in the centre.
Pour in the butter, sugar and egg mix and stir until smooth.
Divide the mixture between the loaf tines and bake for 25-30 minutes until a skewer comes out clean.
Leave to cool in the tin for 10 minutes (VERY IMPORTANT!) before turning out onto a wire rack.
