Cheese and Basil Meatballs with Tomato Sauce (GF Low GI)

I love these meatballs, they explode with taste in your mouth!  I use a herb cheddar to stuff them, but any hard cheese you can tolerate is good.  *Limit the tomato sauce to 1 tomato's worth if you have Fructose Malabsorption or are starting out on a LowFODMAP diet.


Minced Beef
Hard cheese (such as Parmesan or Cheddar)
Basil leaves, slightly torn
GF bread crumbs
Salt & pepper
Oil for frying


Tin of chopped tomatoes
Basil leaves
Salt & pepper


Put the tinned tomatoes, basil leaves, salt and pepper into a small saucepan and heat gently, bring to the boil.  Turn down the heat and simmer for 20 minutes.


Dice a small portion of cheese into cubes about half/ 1cm.  Wrap them loosely in a basil leaf.  Put the mince in a bowl and mix in a handful of bread crumbs, salt and pepper, so the mixture is 90% beef and 10% breadcrumbs.  Take a small ball of meat and flatten in the palm of your hand.  Put the cheese in the centre, then squeeze/ wrap the meat around the cheese.  Put to one side until all the meatballs have been prepared.


Heat the oil in a frying pan, and add the meatballs.  Fry gently, turning as required.  Serve when they are lightly browned with the tomato sauce and GF pasta or rice.
